FRIDAY

FRIDAY......

Gosh were did that week go ?........the husband has just phoned me to tell me that the tenants in our house here have just phoned him to say the boiler has just burst and there is water everywhere so he will be late for dinner tonight as he will have to fix it, the last thing we want is for them to say they are moving out
That's the trouble when you are a landlord you are responsible for all the things that go wrong even if you are not living there, i will be glad when we have sold please god after xmas

RECIPE FOR POTATO LAYER BAKE..........
An oven proof dish what ever size you want depends on how many you are feeding, the prep is the only thing for this dish it takes a bit of time but worth it
Potatos of your choice can't get very good ones here so i use what i think looks good
Leeks
Green beans / peas or both.....you could even sling a can of sweetcorn in if you like
Salt

Pore boiling water over peas / beans and let them sit in it
Peel and slice pots quite thin
Clean and slice leeks.....
start to layer your dish
I put a layer of pots
then the leeks
layer of pots
Drain  Peas / beans and sweetcorn if adding
Layer of pots
After each layer of pots i sprinkle a little salt but you don't have to
just tip a little water over the whole thing and back in the oven on 200 until pots are just going crispy on top
take out of oven and sprinkle grated cheese over the top put back in oven until cheese is melted
mmmmmmm..............ENJOY
You can use what ever you like in this dish i have also made it with spinach and sliced onion or spinach and tinned carrots
I use leeks instead of onion because my husband and i prefer it, they give the dish a nice flavour

  2. Thank you Lo, I'll print it off and definitely have a go, sounds so savoury which I enjoy, I too like a one dish meal. I made some lentil soup to-day, with that and home made bread what more cold you want.
